
Hydrogenation is the method of turning liquid vegetable oil into solid fat. This process stabilises the oil, preventing oxidation which causes rancidity, and as such can be used in manufactured products of extended shelf-life. Fully or partially hydrogenated fats are found in many processed foods, such as margarine, snacks and bakery products.
